The 24,000-square-foot property is the newest and largest entertainment facility in the Bars and Recreation chain owned by Marla Pottinger and her husband, David. Under Pottinger's leadership, The New Fashioned offers a unique blend of innovative activities, family-friendly experiences, and Milwaukee pride.

The New Fashioned is an anchor in an already buzzing entertainment district. It is situated across the street from Fiserv Forum, home of the Milwaukee Bucks, and hosts numerous concerts and events. At the core of its appeal are the venue's inventive activities. HyperBowling, a thrilling blend of bowling and pinball, injects a different energy into the typical bowling experience. "We are not a traditional facility at all," said Steve Davis, general manager of Bars and Recreation. With many traditional centers already in the area, the entertainment group focuses on creating its own niche in the market.

"We wanted to build a venue where families could come together and have fun," Davis notes. "It's important to us that this isn't just a place for kids to run around, but somewhere adults can relax and enjoy themselves, too." HyperBowling provides options for everyone to choose which bowling experience they want, whether traditional or one of HyberBowling’s options. With bumpers available on all lanes, even the youngest bowlers can get in on the action.

Plus, with competitive social play being popular across many age groups the creative team is looking to offer HyperBowling leagues to engage the local community further. "We've had a lot of requests from customers for leagues and tournaments," Davis says. "It's definitely something we're looking to add in the near future, and we think it's going to be a big hit."

But HyperBowling is just the beginning. Street curling, played on the outdoor patio using synthetic ice, provides year-round enjoyment of a sport typically reserved for winter. This modern take on curling opens the game to all visitors, regardless of season.

For a truly local touch, guests can also try their hand at dartball, a sport that blends darts with baseball—a game deeply rooted in Milwaukee's culture. Players aim for a large board laid out like a baseball diamond, throwing darts to advance around the bases. Four bays upstairs are dedicated to this quirky yet beloved pastime. "Dartball really resonates with locals," says Davis. "It's always exciting to watch visitors try it for the first time and get hooked."

Streamlined Self-Service Systems: Bar Wall, Quick Dining, and Reservations

Running such a large venue requires streamlined operations, and The New Fashioned excels in this area with innovative self-service systems that enhance the guest experience and optimize efficiency.

One of the standout features is the massive self-serve bar wall, offering 50 taps of local beers, wines, cocktails, and sodas. Guests use wristbands to keep track of their drinks and can sample up to 64 ounces of any beverage they choose. This modern approach eliminates long bar lines, allowing guests to control their experience. "The self-pour system is a big hit," Davis says. "People love the flexibility it gives them to try a variety of drinks without waiting."

Beyond beverages, quick-service dining makes ordering food easy and fast. Guests can scan a QR code at their table or in the dining area, order via smartphone, and have their food delivered to them by food runners. This streamlined process means quicker service for large crowds, especially before or after events at nearby Fiserv Forum. For added convenience, guests book online reservations for activities, which ensures they can secure their spots ahead of time, making their visits smoother and more enjoyable.

Leaning into Milwaukee Culture: Local Partnerships and Community Focus

Davis points out that the center has hosted various events, from buyouts for the Republican National Convention to special occasions featuring local celebrities. "We're always busy before and after arena events, but we also see strong crowds on weekends when there's nothing scheduled," Davis shares.

When it comes to choosing prizes to carry in your redemption center, the first thing to think about are the players coming in and what they actually want to play and redeem tickets for. We’ve studied our customers and their guests and have determined that there are 4 types of players in the arcade- Impulse, Trader, Saver and Super Saver, and you need to have prizes for each of them.

The first player type is the Impulse Player. This guest typically skews younger but can encompass all ages. They are in your location for a single visit, perhaps attending a school event or birthday party and they have a limited amount of play on their game card. They’ll win as many tickets as possible and then cash them all in at the end, prioritizing instant gratification. They usually spend about 250 tickets or less and most likely will be shopping out of the bins. Think of prizes like Tootsie Rolls, Soldier Figurines, and Finger Traps. This ticket range tends to account for nearly half of prizes redeemed, and likely will be a similar percentage in your game room, so keep this in mind when spending your inventory budget.

The second player is the Trader Player. This is a guest who has their eye on a particular prize, for example, a big Nerf blaster. They won’t win enough tickets for that, so they’ll trade down the wall for something within their ticket range, most likely within the same product theme. They may not get the big-name brand prize, but they can still play an epic game with a lower value, import blaster. They’re spending usually about 250-1250 tickets- think prizes such as Putties and Slimes, Dart Blaster and Princess Jewelry Set. This player may redeem in combination with Impulse prizes as well. This ticket range accounts for about a third of prizes redeemed, so consider this when budgeting for prizes.

The third player is the Saver- this is a guest who is saving their tickets across multiple visits for a particular prize. They’re typically a bit older, pre-teens to young adults, value quality, and like prizes that are new and trendy, such as Nerf Blasters, Licensed Plush, and Collectibles. They’re spending about 1250-3750, and this is a much smaller percentage of prizes redeemed, so spend your budget wisely.

The last Player Type is the Super Saver. These are your regular, repeat visitors who are playing for high-value prizes- gaming consoles, appliances, and speciality lamps. The game room may be an important part of their social life, and they’re your most loyal guests- you should get to know them by name because they’ll give you great feedback on what kind of prizes to stock. They’re strategic about their play, coming on half-price game night, taking advantage of specials, and they’ve figured out how and which games to play to maximize their ticket payout. They’re usually spending 3750 and up. These prizes take much longer to win so there is no need to stock them heavily. Saver prizes often serve as motivators, meaning that most guests will give up before they save up the required tickets, but that prize has still done its job.

Every store and location is different, so consult your Stock Trend report to get a more accurate feel for actual ticket redemption. A 6-week range should give you a good overview of the ticket ranges being redeemed, and you can use that as a base when placing orders. The most important thing is to keep your guests happy and provide prizes to motivate them to play and return. Prizes drive gameplay, and winners make players.

Fun is off the rails at DiDonato's Family Fun Center

Hammonton, NJ, is a small town of just under 15,000 residents nestled between Philadelphia and Atlantic City. We spoke with Christine Dillon, the DiDonato family's third generation to run the alley, to hear how their small-town center makes such a big impression.

DiDonato Family Fun Center has been a Hammonton landmark since 1952, growing from a 4-lane bowling alley to a true "one-stop" family fun center with something for everyone ages 2 to 102.

"My grandfather, Tip, and his brother, John, started this place in 1952, and they quickly expanded to eight lanes with food and then 18 lanes by 1958. My father helped run it for a long time, and now I've been given that responsibility," Christina Dillon explains, "In 1966, the center had a massive fire, and we rebuilt it into what it is today."

Fast forward to 2023: DiDonato's Family Fun Center is a busy 26-lane center that has emerged as a community destination, bringing magical experiences to tens of thousands of guests year after year. This unique center employs a five-star chef, pastry chef, full-time artist, and fabrication specialist. The creativity of this family and center is exceptional!

Off The Rails Entertainment

Built in 2016, the most magnificent feature of DiDonato's Family Fun Center is likely the Rolling Railway, their signature locomotive train that's specially made for driving guests through grand holiday spectacles created by the family each year. "My father built a train for the local Halloween Parade down the Bellevue main street," Christina says, "and it was such a hit. Eventually, he decided it should always be running at our center. From there, it naturally grew pretty quickly." The magic starts at Halloween with the spooky, cobweb-covered Trick or Treat Train. The train meanders through a
creepy town modeled after the movie Halloween Town. A corn maze, a friendly witch, and a pumpkin patch round out the family fun.

The Magical Holiday Express, however, is the biggest hit. "About 25,000 people visit yearly to enjoy the train ride through our millions of Christmas lights in Holiday Village,” says Christina. “In Santa's Workshop, you can take pictures with Santa, meet the elves, and share stories with Mrs. Claus. Of course, we've got warm cookies ready as well."

The train is also in service during Easter. The Easter Eggspress delivers families to an Easter-inspired mini-town, where kids hunt for Easter eggs and get lost in a spring hedge maze. Photo opps and tea with the Easter Bunny in the charming schoolhouses and chapels dotting the property are a must for all the kids.

Full Freight on Food and Beverage

If a magical railway isn't enough, DiDonato's food and beverage offerings will put the experience over the top. "The Alley Bar and Grill is our heightened dining experience," Christina
explains. "We've got a wonderful five-star chef on staff who makes everything from scratch, from our fries to our sauces. He creates wonderful plates, from filet mignon and seared ahi tuna to hand-breaded chicken wings and homemade ranch."

The restaurant’s popularity receives a helping hand from the center's consistent marketing, and a lack of local fine-dining competition provides another ample opportunity. High-definition pictures of their offerings are strategically placed throughout the website; even on the reservation page, you'll find evidence of their mouthwatering plates on the lanes.

"Hammonton is the blueberry capital of the world,” Christina tells us. “So, we're currently featuring blueberry mojitos and blueberry Bellinis. The holidays bring Jingle Bell Mojitos and Cotton Tail Martinis!" The Pin Deck is DiDonato's delicious dessert capital. "Accessible from inside the lanes or out by the train, The Pin Deck is where you go for everything sweet! Our professionally trained pastry chef creates boozy milkshakes, seasonal sundaes, and hand-dipped ice cream. It's all homemade right here on the property," Christina explains. Their expansive menu brings a colorful compilation of treats to life, ranging from strawberry shortcakes to apple pie nachos.

Staffing The Magic

Christina values her staff and speaks glowingly about how much she respects them. Every mention of a staff member was immediately followed by applause several times. This might explain how, in a town of 15,000, this center has gathered so much knowledge and expertise. Their team features much of the DiDonato family: a five-star sous chef, a professionally trained pastry chef, a full-time fabrication specialist, and a large enough team to cater to the tens of thousands of guests visiting each year.

"My father taught me to give back to the community and treat our staff like family, so we've created a really happy and fun environment," Christina says. "A lot of it is family. My grandfather comes in to check on business every morning. My dad is here 24/7. You'll find my mom helping Santa in the winter and my brother scooping ice cream in the summer. We're lucky to have such an outstanding team supporting us so we can provide this incredible experience." Little did we know Christina's dad, Stephen, was on the phone, too. He introduced himself at the end of the call, adding, "My daughter always gives me a lot of the credit. But she is the driving force. She's doing an amazing job."

Wayne Recreation and Cosmic Bowling in Fort Wayne, IN, had seen better days. After sitting unused for six years, the once-popular 32-lane bowling center had deteriorated to what seemed a teardown. That’s when Mark Johnston heard from a friend who had bought the property at a bankruptcy court sale and asked if he wanted to return to the bowling business.

Johnston wasn’t interested initially; he was enjoying his recent retirement from the construction business. But he had worked in bowling when he was younger and knew the business. He contacted A.J. Brunner, another veteran operator in Fort Wayne, with whom he had previously partnered to refurbish and sell another local center, Thunder Bowl #1.

The two investigated the site and felt it had potential. “All the bowling equipment was there. The project just kept moving forward and looked like a great opportunity,” says Johnston. A further inducement was the arrival in Fort Wayne of PBA Hall of Famer Wes Malott, who was looking for a place to open a pro shop.

Johnston and Brunner envisioned a “bowler’s country club” that would respect the long bowling tradition of Fort Wayne and serve the many local bowlers displaced by the closure of Wayne Recreation. The partners undertook an extensive remodel, adding new plumbing and air conditioning, a sports bar, a restaurant, and an outdoor patio. They took out an in-house pool hall and created a 1,200-square-foot pro shop that is now Wes Malott’s Bowler’s Den, a full-service facility that draws bowlers from all over the region.

They installed new synthetics, a scoring system, and other capital equipment from US Bowling on the lanes. The original Brunswick A2 pinsetters needed some TLC but were soon in good order. In August 2021, they reopened under a new name, MVP Lanes, and bowlers surged through the doors. “We had people come in here that had quit bowling,” says Brunner. “They started bowling again because we opened this up. This is where they come and hang out, even when they’re not bowling.”

In 2022, there were three summer leagues, and they currently have six-day leagues in the busy season. Brunner says that’s unheard of anymore in the bowling industry. “It’s pretty unbelievable. We far surpassed our expectations for the first year,” he says. “This year, we have very few openings for teams whatsoever on any night. We had to turn some people away.” There are leagues from 11:00 a.m. to 2:00 p.m. on a typical day, followed by three hours of open bowling and then leagues until closing time. “Most days, we’re open 15 hours a day. We’re constantly open,” Brunner says. In addition to regular competition, league bowlers can participate in plenty of contests and promotions, from 50/50 raffles to strike pots with $1,000 prizes.

MVP has hosted several tournaments, including regional qualifiers for the Teen Masters, local and state tournaments, and several collegiate events. Youth leagues and some
high school teams get support through sponsorships and discounted lane rentals.

High customer satisfaction generates excellent word-of-mouth publicity for MVP. “You can’t have enough ambassadors for your business,” says Johnston. “Our customers have helped us succeed because they are willing to [tell others] how they enjoy being here.”

Heavy social media and web marketing also help attract new customers and remind existing ones to return. “You have to keep all these things up to date,” says Brunner, who posts 25% of the content himself and uses an outside agency for the rest. MVP also buys local TV ad time on FOX Sports’ PBA coverage, which they say keeps them top of mind with local bowlers.

The bet on a center “by bowlers, for bowlers” paid off for the owners, who believe not everyone wants a center with multiple attractions and fancy design. “We just deliver a quality bowling product,” says Johnston. “You’re not walking into a place that’s dark and dingy. It smells good. The product we bring to every bowler, you don’t find that stuff from many places. Here, you know what you’re getting every time you walk in.”

Brunner says customers regularly thank him for returning a genuine bowler’s place to town. “I don’t think bowling is dead. There’s such a big demand for bowling that’s not a family entertainment center,” he says. “Everybody keeps pushing that, but not everybody wants to go where all the kids are running around.”
